How To Store Achar And Murabba So They Last Longer

Pickle Storage

Achar and murabba are traditionally preserved foods, built to last — but how you store the jar after it's opened still makes a real difference to how long it stays good.

Oil-based achar. This is the easiest to store: no refrigeration needed. Keep the jar tightly closed in a cool, dry place away from direct sunlight, and — this is the part people skip — make sure the pieces stay submerged under the oil. Oil exposed to air does its preserving job; pieces poking above the oil line are the first thing to spoil. Always use a dry spoon; any moisture introduced into the jar shortens its life significantly.

Vinegar-based achar. Similar rules apply — cool, dry storage away from sunlight — but vinegar achar benefits from refrigeration once opened, more so than oil achar. The acidity helps preserve it, but it isn't quite as stable at room temperature over the long term as an oil-matured jar.

Chutney. Chutneys like our Green Chutney are the most perishable item in our range, since they're ground fresh rather than slow-matured in oil. Keep the jar tightly closed and refrigerated after opening, and use a clean, dry spoon every time. Expect a shorter usable window than achar — a few months refrigerated, not the many months an oil pickle can manage.

Murabba. Sugar syrup is a strong preservative on its own, so murabba like our Mango Murabba stores well in a cool, dry place even without refrigeration. That said, refrigeration helps in hot weather and doesn't hurt the texture, so it's worth doing during summer months. As always, a clean, dry spoon matters here too — sugar preserves are just as vulnerable to introduced moisture as oil pickles are.

The one rule that applies to everything: always use a dry utensil. Water or saliva introduced into any jar — achar, chutney or murabba — is the single most common reason a pickle spoils early, regardless of how it was originally preserved. If you remember nothing else from this guide, remember that.

Frequently Asked Questions (FAQ)

Does achar need to be refrigerated?

Oil achar (mustard oil) does not need a fridge — the oil preserves it; keep the jar closed in a cool, dry place with the pieces under the oil. Vinegar achar keeps best in the fridge after opening, and chutney should always be refrigerated once opened. Murabba is fine without a fridge, though it helps in very hot weather.

Can we keep achar in the fridge?

Yes. A fridge never harms achar, but oil achar can turn thick or cloudy in the cold — that is only the mustard oil setting and it clears again at room temperature.

How long does achar last?

Traditional oil achar keeps for many months at room temperature and its taste matures with time. See achar kitne din tak chalta hai for details.

How to store achar for a long time? (Achar ko kharab hone se kaise bachayein)

Hamesha sookha, saaf chamach istemal karein, jar ka dhakkan achi tarah band rakhein, aur tukray tel ke andar dooby rehne dein. Geela chamach aur khula jar achar kharab hone ki sab se badi wajah hain.

Does achar go bad?

Yes, if water gets into the jar or the pieces are not covered by oil — signs are a sour or musty smell, white fungus on top, or soft, slimy pieces. A dry spoon, a tightly closed jar and enough oil prevent this. More in achar kharab kyun hota hai.
