How To Use Achar Beyond Daal Chawal: 5 Traditional Pairings

Recipes

Ask most people outside Sindh what achar is for, and they'll say the same thing: a small spoonful next to daal chawal. That's accurate, but it undersells how much a good jar of achar actually does in a Sindhi kitchen. Here are five other ways it regularly ends up on the table.

Inside parathas. A thin layer of Mix Achar or Lehsan Ka Achar folded into the dough before rolling, or simply spread on one half after cooking, turns a plain paratha into something with real depth. The mustard oil the achar is pickled in actually helps the paratha stay soft rather than drying out.

Alongside biryani and pulao. Rice dishes are rich and layered, and a sharp, tangy achar cuts through that richness the same way a squeeze of lemon does. Lehsan Ka Achar in particular pairs well here — its savoury depth doesn't compete with biryani's own spice, it rounds it out.

Stirred into raita. A finely chopped spoonful of any oil-based achar mixed into plain yogurt raita adds a tang that plain raita doesn't have on its own. This works especially well with Mix Achar, since the different vegetables inside give raita a more complex flavour than a single-ingredient pickle would.

As a sandwich or wrap spread. Green Chutney in particular works well here — spread thin, it adds sharp, fresh heat to a sandwich or wrap without the sogginess a wetter sauce might cause. It's a faster way to get achar-style flavour into a quick meal.

With barbecue and grilled meat. This is where garlic achar earns its reputation — a few cloves of Lehsan Ka Achar alongside grilled meat cuts through the richness of the char and oil, the same role a chutney or raita would normally play.

None of this is complicated. The point is that achar in a Sindhi household isn't treated as a single-purpose condiment reserved for one specific meal — it's a flexible ingredient that shows up wherever a dish needs a sharp, tangy, or savoury lift. If you've only ever eaten it with daal chawal, that's a good place to start, but it's worth branching out.
